Don't know if anyone's spotted this on Netflix - I'm sure you have, as it's been on for while - but it's very good. I think it's more history than entertainment, but is very well made with some very interesting footage and interviewees, many of whom I've not seen before. Some proper automotive historians, and a lot of people who were there (but not necessarily related to Shelby!) - Pete Brock, Henry Ford II, Piero Ferrari, and many others. Worth a look, I'd say.
